After charging new energizer AAA batteries with peak warrior to full, i can put them back on charger for a second time and they will take another 40ma or so.

Its all earth!

Depending on the charger I have also seen them take more after they shut off saying charge complete. Yup.

Charger is adding power by applying more voltage that the battery is at rest. so when the charger stops, its at say 1.25v. once it shuts off, the battery drops to 1.2v.
hit charge again and it starts charging again. One of many reasons it goes another 40mAh is because the charger monitors things while charging and it won't know within one second, if it is fully charged or not, so it charges and then realizes its fully charged.
