I have the above servo new that I want to use with a Jive 100 LV with the default BEC voltage of 5.6V. The servo says 6.0-8.4 on the case. Will 5.6 be a problem? I can live with a little slower speed.

5.6 Will Be OK!!
It should run just fine on the 5.6volts... they are more worried about using higher voltages...
Is there a reason you don't want to move up to the 6.0volts on your BEC??
