Will the CGY-750 and sbus receiver work with:

Align DS615/620/655 servos?
Futaba 10CAP (2.4GHz)?

With the 10CAP, yes. Don't know about the Align servos.
You will have to use a mix to activate the ail and ele gyro gains from the TX or just don't worry about them and adjust in the CGY-750 when need be.

I've helped setup CGY-750's with Align servos - no problem. For the tail need to make sure you have the standard frame rate.

Tail standard frame rate is 1520us?

Can the cyclics and throttle (DS615/620) take 285Hz?

My cyclics (DS615) are set for 285Hz and are warm after gentle flying. Should I care? Running LiFe unregulated BTW.

285
285Hz is for high quality servos. No they shouldn't be warm. Reduce it or change servos. Anyways you wont notice a difference by lowering it.

I run DS610 cyclic DS650 rudder on my N5C with a CGY-750. I run the cyclics at 140Hz and the tail frame rate is 1520us.
