Although I've never "converted" a 700 to an 800, (other than the frames and head size, and the length of the boom, they are largely the same heli), I have flown the 800 on 12S at low head speeds (1300/1400) with great success.

You just have to know that a 12S powered system swinging 800 blades has its limitations. Stay within those imitations, and the heli is fun to fly, and flies great. It's big, smooth, quiet, flights are long, autos can't be better.

The 700's head is overbuilt as it is, and would have no safety issues swinging 800 class blades at the lower head speeds.
