Now I've found definitive proof that the escs do indeed function as you guys have described, but don't yet understand nor believe that it is necessary for them to function this way.

It's for the reasons I've given. And two comparisons do not need to be identical to be valid. A motor wants to see a sine wave. Many square waves that approximate a sine is better than one big square pulse.
