Replacing the piston and ring, sleeve is good as far as I can tell. Should I replace the head? See pic for damage.

I don't always fly helis, but when I do I prefer to fly scale.

Are those melted on the head or dimples in the head? If they are dimples in the head you will lose a "little" compression. If they are melted on the head, take a dremel and clean them off and you will be ok.

It's a little of both. Most of it looks like it would grind off tho. How much can I smooth off with a dremel before it gets to be too much?

Try to grind just the pieces and not the head.

Looks like you chipped a piston! I would buy a new one.

Yeah a good chunk of the piston and ring. I'm replacing those but I'm trying to salvage the head. I'm going to try to clean the pieces off today and will post a pic later.

I think I would give it a try, Like I said earlier the worst would be minimal loss of compression. Its hard to tell how much of the head material was removed, buy the looks of the picture, Not much.
You will know when you fly it. My guess is, it will be fine!
If you try it, let us know what you think!

Got it put back together today, it fired right up. I need to break it in since it's basically a new motor and will get to that this weekend. Will post a flight report soon.

From what I saw of the head, you probably won't notice any difference.

Flew it today. It runs fairly well but it revs up when I go to a higher throttle and then back towards idle. The motor rpm stays higher than it should until I basically land and bring it down to idle, then add throttle and it returns to where it should be. I think its just a tuning issue, I've set it rich to break it in, high speed is 2 turns out and mix control is in the center of it's range. Could it just be loading up on fuel around half stick? It's throwing me off because I've always had rpms increase when the motor leans out, which I dont think its doing with how rich the needle is set. Any ideas?

Tuning indeed. Like you said, you are doing a new running-in cycle.
New piston/sleeve does not equal to same motor so expect new things
