NVM,

I need to abit more research, and then I'll come back with some very specific Qs...

I found a fair chunk of peeps that seem to do up kits, but man there are TONS of choices, so damned confusing, an entire different hobby really!!
...Once upon a time there were Nitros, flybars and frequency pins...

You're absolutely right, which is why I personally love it because it allows you to be creative and personalize your model. Everything can be changed or tailored to the user depending on their experience, their budget etc.

Research is the foundation of the hobby; multirotor's in this case. Look what others have, find dealers that keep a good stock of whatever part you plan to use, find out if you want a tri-copter or a Hexacopter or anything in between, the options are endless.

Get into a forum and ASK QUESTIONS!!!! Many use the trial and error method and end up wasting money. Why not just see what others have tried let that be your intel for your decision to order the right part.

I am very very new to this and with the help of these fine men have made great choices, not spent a whole lot of money, had tremendous success and so much fun with this.

I suppose if I were to ask what is your goal since these machines have so much to offer.
