The "adapter" is simply going to be a S.Bus decoder, right? So that same JR/Spektrum adapter will also work for non-S.Bus Futaba RX's well, right?

At least that is how I see it going down.

You will need an Encoder not a Decoder. The GY750 has only S-Bus input and no inputs for separate channels. You will need to Encode up to 16 PWM channels to S-Bus.

Today I had a chance to fly Sawamura's 700N with GY-750.
It feels like a flybared heli! Very smooth and predictable with Radix 690FBL! I thought the blades were heavy and slow but these combination is owesome! So far, so good

Does anyone know what voltage the 750 will run at? Hoping it will be able to handle 8V for us 2s lipo fliers.

I asked Matt Bottos a few weeks ago, he did not know.

Yeah the new R6203SB is old news. Word is it will be released at the same time as the CGY-750 toward the end of this month. Futaba is also going to offer a combo package of the CGY-750 and R6230SB for those who want to buy both at the same time.

Yes, the 750 will handle 8V just as the 701 does.

I am running both unregulated.

Ron Lund is misinformed, this has been covered a million times in these threads.

Spektrum users will be able to use the CGY-750 via an S.Bus decoder that Futaba will be releasing shortly.

The R6203SB is listed in the latest Tower Talk. Looked at it yesterday at E-Fest. Also fondled one. Small, the way to go for the CGY-750. Kyle Stacy had one in his 450 with the CGY-750, AND he won the Heli Smackdown again, close call with Bobby Watts second, Matt Botos third, all using the CGY-750!!
