I have 2 different 5S lipos,
recently the balancer shows the centre cell in each as being a little lower voltage (so it bleeds the outer 2 cells either side).

When lipos are used, do the cells discharge at slightly different rates, does the centre cell age quicker?

or is this an odd conincedance?

When demanding a lot from a pack, they will get hot (or at least warm).
The outer cells are better able to disipate this heat, but the middle packs are not only insulated, but also getting heat from the packs either side.
Because of this, its very common for the cells nearest the center of a pack to degrade first.
