This might sound silly, but are you in idle up when doing this?

sounds like it might be rich. does it do it upright on full climb out or only inverted? do you have a temp gun to get a baseline on the tune?

Does your clunk line hang up on anything in the tank? Does it reach all the corners of the tank? You might be leaning out for a split second and not noticing it. How about a header tank??

Getting very hot and full pitch then its the high needle being set too lean. Start it at 1 3/4 - 2 turns out. depending on fuel brand and nitro content you may need to be leaner but start there before you burn it up. Then lean it a couple clicks at a time. when you load it now hard and immediately hit hold you will hear it hang on the pipe as it comes back to idle. This is key. you never want to hear that sound and should be running a few clicks fatter then that point.

At a hover or light flying with low pitch even with 2100 HS you are only on the mid needle which is why it may seem fine then.

Gud Day Jerry,

It sounds like you are running to hot(LEAN), You need to check your needle settings, I run at +- 1.5 open on both needles, ~gud starting point if you`v run the motor in~ close both needles and check how much turns it takes to close(give you/me a ref point),then re-open them 1.5 turns, also check your low idle setting, but it sounds like its fine,as your heli`s idling, myne is 5deg clock wise from centre, fuel also plays a role, myne doesn`t sounds happy with 15%m but it could be because I`ve set it up to run on 30%, the tipe of exhaust you use will also change the settings on the carb, if you do not have a temp gun you can always feel the temp on the backplate of the motor(not that curate), you should be able to keep your finger there for about 10 sec or more, if its to hot, reachen out the motor by turning the high end needle outwards or counter clock wise, do not run the motor lean, as you will damadge the internal parts!!!
Hope this helped
Regards
Rudi

My advice would be to read in the instruction booklet and set all needles back to factory settings and re-tune. It's the safest way to know that you are not hurting your engine.
