Ok so upon putting the new EXI head and mainshaft on my belt cp v2, I found out that the stock ESKY bearings are a little too big.. What size shaft is on the EXI head and what bearings would be best to use?

Something ain't right Both shafts are supposed to be 5mm. You probably have a bad bearing.

Another possibility is that the Exi mainshaft is shorter than the Belt shaft and it isn't reaching the lower bearing making it seem like its loose. Try using the stock BeltCP main shaft with the Exi head parts. You will probably have to adjust all the links including the swash to servo links.
