higher gain means more gyro sensitivity. you need to be in rate-mode when you're setting everything up, but you should fly in Heading Hold mode.

Some gyros also dislike being turned on in rate mode. Most futaba gyros, for instance, need to initialize in Heading Hold mode, and then can be switched to rate mode. If you turn them on in rate mode, and try to switch to heading hold, you get an error.
