Upon re-checking the tightness of bolts on important points just prior to the flight, the cap screw head simply came off when the hex. driver was inserted.

I was lucky that this did not happen in flight, otherwise I wonder what would be the consequence.

Is it OK to have double mast supports for insurance?

No reason why you can't other than available space for the second one. That said, you could simply replace the existing collar with any 10mm collar that uses set screws instead if that will give you a greater degree of confidence. When I changed over to 6.9 gearing I removed the thrust bearing setup, installed a second bearing in its place and used an additional collar from an Outrage (mainly because it's what the LHS had on hand at that moment) on the top of the upper bearing support to securly locate the mainshaft in the vertical plane. Next occasion I have to to take it all apart again I will likely replace the lower collar with another one that uses set screws simply because I've now seen a few posts from folks that have had the screw snap in the stock setup. Don't think it would make a lot of difference with my current setup, but it could upset an otherwise good day at the field if it broke.

Yes, there is ample space below the existing mast support.

I have drilled out the snapped bolt and re-drilled the hole to accommodate a M3x10 cap screw with a M3 nut on the opposite end. Hope it works.

Additionally, I have ordered a Trex600 lock collar to be placed underneath the existing mast support for extra support, and in case the cap screw snap again, (once bitten twice shy, no?)

Why have I got to order one from Trex and not Century, simply because local Century distributor did not bother to respond to my enquiry and also the Trex spare parts are readily available locally.

Century has a lot more to catch up on this.

What I found on these collars are that you don't need to tighten to much in order to hold. I snap one myself, and after studying it, decided I had overstressed it.
When testing the pull on each turn, I found it would hold fine with much less effort on the bolt...

I'm going to recommend just cutting thick wall brass tube, like the old Futura SE's had, and not even use a collar. Its real easy to do, and will be lighter..

This was how I managed to savage the mast support as mentioned in the previous post. The cap screw with the hex nut is now M3 instead of the original M2.5 and I hope it will hold up.

Update on the Lock Collar
I have ordered a Trex600 lock collar to be placed underneath the existing mast support for extra support
Sorry to update here that the space below the mast support is not wide enough to accommodate the Trex600 lock collar. Visually, I first thought there's ample space but it turned out to be otherwise.
