I am having a real PITA time trying to solder my BEC wires (very small gauge) to my ESC wires (large gauge) and everything to the deans plugs.

I can get the small wires onto the big wires, but then when I attempt to solder it all onto the deans, the small wire melts off and becomes unsoldered. Also, the plastic coating on the BEC wires start to melt.

Any technique to advice would be appreciated!

I prefer to make cutouts in the insulation on the ESC wires close to the ESC. I then wrap the BEC wire around the exposed wire and solder. Then I shrink wrap or use electrical tape. I do this for 2 reasons. 1. For me it is easier. 2. Less strain on the skinny ESC wires from plugging and unplugging battery.

I tin the esc and bec wires independantly, next I use some very fine wire and wrap the two together then solder both to the deans. I had the same problems as you and this worked out fine as far as I know.
BTW, after a long break I finally got the HC 500 sorted out.
