I will be running my Logo 400 using the recommended hacker motor (1350Kv) and ESC. Using 6s 2500 to 3200 mah 30C lipos

Which is better, and why?

1: 18 tooth pinion with the governor set to 80% for ~2400rpm
2: 20 tooth pinion with the governor set to 65% for ~2400rpm

We have run that set-up with an 18tooth, but the head speed was more like 2600 at the 75-80% range. We are currently running a 1400kv motor with the 18 tooth @ 2700 head speed in the 75% throttle range.

Head speed calculators only get you close to the reality, as motor kv's vary, some batteries are better than others, and even identical ESC's being used with exactly the same set-ups on identical helicopters, won't necessarily operate at the same exact throttle % (I have practical experience with this).

My advise is to start with the 18 tooth, and adjust from there if you're not happy with the it.
