Been flying glo-fuel for 18 years and am brand new to electrics so take it easy on me.

I have the 35G ESC. What is the difference between the High, Middle and Low Voltage protection modes? Does High Voltage protection mean the battery cuts out at a higher voltage?
I have mine programmed to Middle Voltage Protection, but I am getting 15 minutes of flight time (at a low head speed). Then when I recharge the battery (3 cell, 2100mah) I'm putting over 1900 back into it. Am I draining the batt too much?

you should drain 1700 out of your batts to make them last. 1900 will kill your batteries way fast. you should set you batterie protection to high voltage, and fly for about ten minutes.

Just use the 80% rule and you'll be fine.

Your batts will last alot longer.
