I have a bunch of 3s 1000 mah packs from a MS hornet that I no longer fly.
Is there a suitable pinion for the 200 that would allow me to resurrect these beasts?

I just received Gaui motor fitted with 12T pinion for 3s testing on the 2nd 200. It is almost ready to fly except for the gyro. After testing, I'll let you know how it is. I would prefer 11T pinion with 3s but Gaui did not have any.

a 10t pinion will be the same gear ratio as a 15 tooth on the original 4800kv motor. allerc has pinions in 64 pitch that supposedly will work and you should be able to get an 11t. But if you really want to run 3s, might as well get a lower kv motor.

I do believe 3s is the way to go on this heli as 2s is nice but the runtimes are short and while they finally have the heli at a point where it can do flips and such, it doesn't have that crazy 3d feel.

The problem with 3s is that the heli gets more susceptible to static hits, something the new shaft drive tail should fix, albeit most likely at the expense of more parts snapping in every crash.

A 12 tooth pinion can be used as well on 3s but you would need to cut down your throttle curve. Also, you can't use normal pinions as far as I can tell, they have to be very short or they will interfere with the belt.

12T is the pinion that is being used on a brushed motored Hurricane 100 (EP100). It is identical in height as 15T.

You will need your throttle around 70% with the 12 tooth unless you want to be really high on the rpms with 3s.

Ok, so if I pull my B20 22S Hacker motor from the Hornet, it has a 4091 (Approx 4100 kv) rating.

Would this be a better choice, and if so, what pinion would give a nice hot setup?

around an 11-12 tooth on that motor should work good, but I think the packs are going to be too big.
