I would imagine that dropping that amount of water causes a serious change in the loading on the main rotor, and therefore the torque reaction, hence the piroette.

I'm just guessing though

its LTE (loss of tail rotor effectiveness) he comes in for the drop at high weight, low speed, and with a tailwind. So he has a ton of power pulled in. The tailrotor doesnt have enough power to maintain heading and the helicopter starts to spin. As the load is dropped off, weight decreases and so does the tail rotor thrust required to counteract MR torque and the spin stops.
