How do I know if my TJ Pro is working or not?
I setup a TJ Pro correct as far as I am aware however I am not convinced its actually governing instead of using my curves. Is the anyway I can confirm it is functioning correctly?

Find someone with a tachometer and check it in the air. I use this method to check my governors.

First, are the TJ lights coming on when their supposed to? Verify that the "on" and magnet sensor LED's light up without the engine running.

Secondly, you should be able to hear the TJ engage if you set it up correctly. Your throttle curves should be a little bit higher than your governed speed so that the TJ is pulling down the speed. If you hear your motor change its note when you engage the TJ, then you know its working.

I find that my tj will let the rpm overshoot a bit before engaging, so when it engage, I will hear the rpm drop slightly.

A possible way is to set your last throttle point at 50% throttle and do a climbout, if the rpm stays constant, you know it is engaged and working fine, if rpm fall, you know it is not working.
