I have a 601 in my EVO every time I fly my EVO I have to re adjust the rudder trim and then it will hold but every time I go up I have to re adjust the trim every time any ideas as to why this is happening?

I'll take a shot at it. The 601 needs to be in heading hold when you power up the helicopter. All trims and sub-trims should be 0. Revo should be inhibited. Mechanically trim the tail by moving the servo or adjusting the links so it is trimmed at Hover in NORMAL mode. When you go to Heading Hold she will be solid. Do not use trim or sub-trim. You need to make sure the tailrotor is trimmed to neutral in all of you flight modes. This is a must for the 401 and seems to be consistent with the 601. You may be able to trim some once it is set up but start here and try to leave the trims alone. Mark H

All of what Mark H said above except the 601 doesn't need to be in HH at power up. It will work either way.

try mechanically adjusting your tail rotor linkage while hovering in normal mode so that the tail remains relatively still. Leave your rudder trim and subtrims at zero.

I setup my 601s to be in AVCS mode at all times, I don't touch normal mode.

Your gain should be no more than 37% otherwise you'll burn out the tail servo.

If you are only flying in HH mode then you do NOT want to trim out the tail mechanically to hover. With the servo centered you want the pitch slider centered so you get equal travel left and right with the limits above 100. The 601 will automatically give the correct amount of pitch on the blades to keep the heli from yawing. Make sure you have no trim, no subtrim, no trim offset, etc.. Even one click off on the trim or 1% subtrim will cause the gyro to turn the heli. If you can, inhibit all trims for the rudder. The gyro doesn't know if it's trim or you moving the stick so all it knows is to turn. If you have no trim, limits above 100, actual gain around 37%, and a smooth linkage setup and it still drifts, then I would suspect a bad sensor. And it does not need to be turned on in HH like a 401. It will center just fine in HH or normal.
