I'm assuming that you are using the Interlink Plus controller and not your own radio.
You can change the pirouette rate pretty easily, you just need to know where to look. You can change the value in two places. You can adjust the pirouette rate on the gyro, or you can do it with the rudder ATV.
To edit the rate on the gyro amp, click Aircraft | Edit to bring up the Aircraft Editor dialog. On the left you should see a tree view. Click the + next to Electronics, then click Heading Hold Gyro. The parameter you are looking for is named Heading Hold Rotation Rate. Lower values give a slower pirouette rate.
To edit the rate in the Rudder ATV, Click the + next to Software Radio, then click the + next to Output Channel 4. Channel 4 is the rudder channel on most transmitters. Click Input and find the value named Percent. This is the ATV/AFR for the rudder channel. Reducing the value will result in slower pirouette rates. You could also use the Low Rates and Exponential items just above that to get a similar effect.
