Are there any pilots on here that use a linear throttle set up ? What are the pros & cons of doing this ? When I thought about this it makes sense in my way of reasoning but I'm probably wrong.

IMHO, you are very wrong. You want to set the pitch curve linear, then adjust the throttle curve so that you maintain a constant head speed. If you do it the other way around, it will be difficult at best to get a linear feel from your pitch.
