What's the correct way to remove the clutch from an old OS 61 ?

Hmm... Are you asking about removing the OS prop drive washer? Are you trying to remove the fan? Removing whatever clutch might be installed will depend on the brand of helicopter.

A picture would help.

Looking at pics on the interwebs, it's threaded on. You'll need some way to prevent the crankshaft from moving. Either the Delrin stop that goes around the connecting rod once you remove the backplate or a soft handle toothbrush in the crankshaft after removing the carb. Might need to heat the crankshaft a bit to loosen up the Loctite. Use a rag around the clutch. Lefty Loosey.

Does this help? My guess is you will need to make a tool that engages the holes in the clutch shoes. As KJH said, you will need a way to lock the crank.
