What does head response actually do? In other words, if I increase it from the default of 1 to say 3, how different does my heli fly afterwards? My 750 is mounted on a Synergy N5. Thanks.

As per the manual and paraphrased, head response is increased when the rotor system cannot respond to the gyro as fast as the gyro "thinks" it should, resulting in oscillation even with low head gain. Increasing head response needlessly only serves to dull the performance of the gyro and undermines how well the model flies.
