I'm in Florida also. Andy01 is correct about the ESC not liking 78%. With the 13.8:1 gear ratio at 1350 rpm and good 30c 12s packs, the ESC will actually be running in the low to mid 60% an the esc will get around 180 degrees or higher for a 5 minute flight. The ESC is rated to handle the temp but I personally don't care for it.
There is a cheaper way without getting a lower kv motor. The goblin motor pinions work just fine. Get a 20t pinion to replace the 22t pinion that came with the kit. Then you will have a 15.2:1 ratio. I use a 520 kv motor and fly between 1300 an 1350 rpm on a 2 blade 17 pound Roban AS350. My esc temps are now around 145 on a 7 minute flight and the esc is running in the mid 70's to mid 80's %. Unfortunately the Talon esc does not have a data logger so you can't see what the esc is actually doing during a flight.

I have the PHI EC and have been working on the heat issue also. I am using a 450kv motor on 12s with a castle hv120 in governor mode 1200 rpm with the stock gearing this put it at 92% using the castle programing. the esc after 6 minutes was at 195F and had not peaked. The first thing I did to try to cool it down was to install a cooling fan on the ESC, that helped a lot it looks like the temp peaked in the mid 165 range. When I down loaded the castle log the actual percentage out on the ESC was only 80 to 85 percent not close to the 92% the castle programing said it would be. After talking to Castle support I found out the number in the programing is not exact and its better to us the information in the data log. So I changed the pinion to get a 15.21 gear ratio and still used 1200 rpm. Using these numbers it put the programing about 101% that's in the red but according to tech support that is not a problem it will still govern. My next flight started at 95 degrees outside temp and after 6 minutes peaked at 145. And on the data log it was using 90 to 95 percent power out. I need to put a few more flight on it to prove it out but I think this setup will work. I hope this helps

Thanks for the responses, guys! And sorry to hijack the thread, but hopefully this info is good for the OP as well!

I haven't yet purchased batteries, which is why I asked. Sounds like I can use 10S without issue (2 x 5S, obviously) and the ESC should be happier. I already have the cooling fan, so that's a plus as well.

I think I'll start with the 10S system with the stock pinion and see what the temps look like, along with performance. Once I get the batts I should be ready for a test hop.
