I just got my 500 and as I started to fly it is see the tail wags...i bring it down to adjust the gyro gain ....i did it twice and after the second landing the esc blew up in flames....what the hell.
What happened???

check to see if the esc was the correct size for the motor/lipo combo.

More Info Needed!!

A lot of things going on at one time...need to know the machine, power (size batteries) , throttle curve, motor kv, gearing, esc make and listed size (amperage) head speed you are setup for..
If you were flying with too low of a hs (can also cause tail wag) your esc could have overheated.,. When you started to spool up the esc could not handle the load..

70amp speed control required on Trex500. As others have said, we need more information about the setup and equipment used.

An inexperienced pilot can at times use more power than someone experienced flying these things. I have only burned out one esc in the last 8 or 10 years of flying. I was up in the rockies at 8500ft and the air was a bit thin.

Ive done that only once. and It was in an 1/18 scale car meant for 2-3S and I was running 4S. The ESc was aftermarket and "supposed" to handle the power, but just didn't. went up in flames at the end of the run. Unless Im wrong, usually larger than you really need esc is the safe way to go. for example, on my boats that pull lots of amps, I use an ESC that will "handle" 16S and only run a max of 12S.

I recently burned up a 120amp Castle Creations ESC just by plugging it in to the 12s battery pack. Big flames.

It was a bit disconcerting that this could happen to what I used to think was a good brand ESC.
