I have a Logo 600 sx with HKIII 4035-560 motor on order. I was thinking of running 12S. started looking at all the options and didn't understand what was better. Maybe you guys can help.

Both are about the same efficiency wise. Both are capable of handling 700mm blades at high head speed. They are overkill for a 600 machine but give you plenty of headroom to keep a very high headspeed on governor without bogging.

What motor should I consider for a 600 machine?

A 4025 is a good size for 600's up to about 2200rpm +-12 degrees of pitch. If you want to run 630's @ 2300+ w/ +-14 degrees you should stay with the motors you have posted above.
