I did work fishing scallops.
18 hours a day doing the same, just opening the scallops out of the shell.
You have to get it done in 4 seconds or you don't get paid as much as the others, and have the other shell on your hand ready to open it.
18 hours the same; Breaks? ha ha you don't even change your clothes for 15 - 18 days, nor even brush your teeth.
You just want to sleep.
There were sometimes when your mind flew away from you, if you haven't feel that experience you don't know what I'm talking about.
That's why most of them do drugs, I'm not against that (if that shoe fits on them, that's Ok for me).
About your question, about the skipper sleeping; that's why the boat has to have a Mate, He is the one that runs the boat, knows everything about it, any trouble shooting. He gets paid more because of His knowledge.
And when the Captain is sleeping He takes over the wheel house.
The Skipper has to know where the honey bee is and keep the crew together, working as one....
The one that you see on the the TV is just a show they don't show you everything.

Ttons of coffee and cigarettes plus what ever legal pick me ups they can put in their system. There are probably a few that do illegal drugs to keep them awake.

Just think that is you the one that decide to give it a try.
And all of the sudden you get sea sick and start vomiting every 5 mins or that is too much work and you just want quit......

I saw this guy quit and went to see the captain, just imaging that situation, there is NO WAY OUT of that, we are not going back to the dock just to drop off this guy, no way !
So the Captain started making calls to the other boats and see who would take a quitter to the shore, that's embarrassing, so one boat came and got Him.This boat was already full and heading back shore.
He had to jump out of our boat with a wet suit on and they use a rope to get Him out of the water and He has to pay for His food on that boat because the crew is NOT paying for it !

i was on the dock waiting to go on a scenic tour in New Hampshire. With the smell of the food coming from the boat and the dock rising and falling, it was too much.
