I was wondering if I could setup the heli with one ESC and motor, and run 5s and 6s batteries. For different types of performance. If so what parts would you recommend to make this work.

Not to knowledgable on electric so any infomation will help.

You can but you would probably have to change the pinion between 5S and 6S using the same KV motor.

I really want to run it 5S, but I see most are running it on 6S. I don't want to be under powered. I don't need super power.

Power = Voltage x Current

Since you are reducing voltage to 5/6, in order to get same power, your current will increase to 6/5. If your packs can handle this increased current draw, you will be fine. This can be accomplished by getting packs of 6/5 the current capacity. This way your runtime will be same.

That is on the power in side.

Mechanically, using the same motor will require re-gearing so that the motor that turns 5/6 will still turn the main shaft at the same rate. This requires changing pinion to about 6/5 of the current setup. For 10T, it means going to 12T.

So, if you had 6s4000, and 10T, you can go to 5s5000 and 12T pinion and you will be able to keep the motor same.

Or you can keep the same pinion and go with a motor that will turn 6/5 the KV.

How would the performance change if all I did was chang battery and fly. And how would flight time change?

If your head speed was on the high side, you should still be able to fly it. But, close to 15% drop in head speed is significant. But, your flight time will increase by at least 25%.
