Can I use an ar7000 with the dx8 or is the ar8000 the best to go with?
I will be using it in a 450 pro.

Little over kill for a 450 but yes. I'd use a 6210

I have an AR6115e in my 250 and will use the same RX for my 450 when I built it again. No problems flying that combo out of sight. The AR6115 picks up telemetry stuff just fine with the TM1100 telemetry module on my Trex-250

I have several AR7000's also binded to my DX8. They work fine. If you have an older AR7000 like I do then it's not capable of providing the flight logger data. You can still get the voltage, like any DSM2 or DSM-X receiver. Newer AR7000 do provide the telemetry flight logger data.

If you are buying new I'd strongly suggest getting a DSM-X receiver of some sort, especially for indoor flying. I had several issues flying inside a metal building with my DX8 all of which disappeared when I fitted DSM-X receivers on my heli's.

The flight logger data comes from the data port. voltage can be picked up from any port. You need to plug the telemetry unit into the data/bind port in order to put the telemetry unit and the receiver(s) into bind mode at the same time or you can put the bind plug in and press the bind button if you have an older RX that doesn't work with the telemetry unit properly. This is what I had to do with an older AR6100 (very first release type of old).

250 and 450 out of sight? That's pretty good flying. I have enough trouble even when I can see them--LOL
