Will I fry my 501/9205 non digital servo on a 5 cell pack? I know that a 5 cell pack is more than 6 volts, but allmost all analog servos will run fine on more than 6 volts. Will the gyro take it? I'm pretty sure the servo will. I don't think the trial and error method is the best system to use here.

When using a 5 cell pack, it is allways recommended to use a voltage regulator. Just after charging a 5 cell pack can have more than 7 volts. Without a voltage regulator it's allways good to get rid of this high voltage, you can do this 2 ways, or leave the pack for some time without using it, or put some load on it with something which cannot fry.
