My wife did not want the NASCAR app and the guy at the Sprint store told her there was no way to remove it. You might be able to remove it if the phone was jailbreaked. Not sure.

Sprint installs their programs - Nascar, Sprint TV etc - as part of the ROM kernel.
The only way to clean out the junk is to Root the Phone and install a cracked version of Android 2.2
The above listed website should have all the info required.
Note that Rooting the phone voids the warranty and if you screw up can turn it into a brick.

I have not had an EVO, yet, but having a few other HTC devices you may be able to root with out unlocking the bootloader which keeps your warranty intact. Also I just had my Nexus One replaced by HTC under warranty and it was rooted and had an unlocked bootloader. If it's a hardware problem, in the event you ever have a problem, just call them and they will take care of you.
