I'm getting ready to fly with it, I have a question about the endpoints on the gear channel with regards to RPM.

I calibrated at +100 and -100. After calibration, if I increase the endpoint above 100 will it give me a higher rev limit, or is there another way to do this? I see the manual's rpm chart only goes to 100.

I'm not sure but it's worth a try. I did have an issue with mine originally where it didn't seem to be running up the way it should, as if the limiter was restricting the motor to an unusually low level. I tried re-programming the receiver endpoints again and it started operating correctly. Might be worth a try if you are seeing the same thing.

End points and actual travel

Make sure that your actual travel is all the way to the point of the upper most carb stop. If your at 100 atv when this happens no matter where you set the travel adjust you won't get anymore out of it. You should have somebody use and optical tach on it to determine the actual head speed and adjust the atv from there.

No clue what that means...

On the 7100R, the limiter, which operates on the gear channel, is calibrated via the throttle channel throws. That's what I was getting at. Re-calibrate and try again. Before you do that, though, you should make sure your throttle is mechanically set up to use 100% throw in both directions (as closely as possible anyway). Get it as linear and centered as much as you can before you calibrate the limiter.
