well I was just really wondering if anything like that existed, I am pretty new the RC heli scene in general

Some applications I though could be interesting would be sending video data back to the controller, or flight data such as speed, orientation, GPS position, battery power remaining etc.

does anyone have any experience with these data loggers?

I have seen some devices that transmit data back... temp sensors, gps, acceleration, angular acceleration... no idea what they are called though, or where to find them

+1 on the Eagle tree stuff, I use it for electrical data on my electric helis. They sell everything you asked about, pretty cool stuff.

The "wireless dashboard" gives you the real-time capabilities...otherwise it's a USB connection after the flight to read the recorded data.

Very useful for curious minds!
