Zaneman007 does a great job of explaining expo in this thread: http://www.runryder.com/helicopter/t436950p1/
Expo - This makes the stick less sensitive around center. It changes the input/output ratio around center stick only. Assume the servo can travel from 0 to 100. normally an input of 12 equals an output of 12, but with expo, depending on the amount an input of 12 may equal an output of 7(servo travels less). Beware if you do expo the wrong way, you end up with an input of 12 and and output of say 18(servo travels more.)

So here is what JR says, the manual will tell you to max out the rate at which the heli will spin, thus max out the travel to 150. (i.e. lets make it spin like a top on steroids). Problem is, that would make it uncontrollable. Thus the next step in the manual, set your dual rate to say 70. This prevents you from ever reaching that crazy @ss spin rate of 150. Still the heli will still spin like a top even with small inputs. Thus the next step in the manual, apply copious amounts of expo, say 40. This makes the sticks "NUMB" around center. The input is 25 that output is 5. But once you hit a certain point, the input and output catch up (input =output) and the heli is spinning like a bat out of hell.
As for whether its good or bad, its just personal preference. If you feel like it is too twitchy, add some expo. If the heli feels sluggish reduce the expo (you can actually use expo to increase sensitivity around center if you go past 0).

He also covers a bunch of other interesting things like dual rates, gyro gain, etc. Good reading.

You have a Futaba, so to soften the stick you would add negative (-) expo. Same with Hitec.

Spektrum and JR use positive expo to soften the response.

Suggest you start with a small amount, then work up 10% at a time to get the feel you like.

I can't speak for everyone, but I use 10% expo on elevator, aileron, and rudder. None on throttle and pitch.

It's really just a personal choice. There is not really a better or worse here... Just whatever makes you fly better. I would do as Magic Hook stated. Start with 10%, see how it goes, then increase it each time by 10% till you get a feel you like.

You should be able to do it in your radio. I have a DX7, so I can't really help you. Your radio manual should provide instructions if you still have it.

You need to look at your radio's manual for that.
