yea i get where your coming from ,however if you hover tail in..adjust trim for say a constant(if ever there was such a thing )wind, then the heli would, providing you kept it facing the same way ..stay in trim...as i said first,in agreeance though on a heli wind and direction is always variable...i think though that what most people mean by trimming a heli is to get the swash plate somewhere near level at no stick inputs...again in agreeance though this does not trim for wind

I dont think it would, trim affects attitude, wind affects position, although attitude can affect position, if you put trim in, the attitude keeps changing, which means the models nose will as in the example, keep on dropping, just like if you hold the stick foreward and dont let go

The wind wont make the model roll or pitch over, all it would normally do, is make the model drift, so trim wont affect that, if the wind did cause the model to roll or pitch (hypothetically speaking) then trim would be useful in that regard

The only axis that trim will work for is the yaw, and that is assuming you arnt using a HH gyro, if hovering at 90 degrees to the wind, you can use trim to hold the tail there (assuming the wind is constant )

I just trim the model so that it doesnt slowly roll or pitch or yaw one way or the other, basically as close to bang on as I can detect , then if there is wind, I just roll or pitch a little to conpensate, and leave it there (assuming the mythical contstant wind)
