something happens to your heli on the job and you are not able to fly it again that day (hypothetical situation)? Obviously preventative is best, but there is always the chance something can and will go wrong. How do you fufill your obligation to your client?

well, i usually only charge for my services after the job is done...if the heli is giving me trouble i just tell the client that and try and reschedual....

Anyway, it's similar to:

You need to state that you reserve the right to decline the job up to shooting day and at the actual shooting time and location.

Why?

If you find that it would be too dangerous to fly based on flying conditions or equipment issues, you should reserve your right to decline, cancel, or reschedule the shoot.

i have a second identical setup with the backup 3megepix camera ready to go and a third naked logo20 frame in reserve.

so far never had to use it, but this way i spread the hours over two helis.

and very important to is what Dakine stated. have the right to refuse the job.

I have backups for everything.

It would take 3 total losses to stop me

Of course I don't bring everything to each job. Worst case, I'd have to run home and get the backup.
