Metal gears are less likely to break in a crash, but have more slop and the slop increases as the servo ages.

Metal gears cost hell of a lot more. Cost me £36 ($60) for a metal gear set for an 8700G and £3 ($6) for a plastic gear set for a 9254.

Metal gears don't deal with high frequency vibes in helicopters as well as plastic / ceramic. Slop will develop faster. Survivability in crashes is a potential benefit but by no means guaranteed.
