All things being equal would I get much more flight time by going to a 7000mah over a 5000mah.

All things being equal you will get approximately 40% more flight time. Additional weight of the 7000mAh pack will cause a non-linear relationship though, so in reality, it will be something less than 40%.

and due to the added weight, you might not get any additional flight time. I just say that is a possibility.

Depending on circumstances.... you might even get less. This is a balancing equation... weight vs. power. In aircraft, we are always making adjustments for weight.

You would be better dropping to 4400's and going to 14s than trying to fly with 7000's, those are heavy packs.

if you're after flight time, Adding weight is the wrong direction.

you want to slow down what spins
Higher volts are more efficient

adding MAh adds weight and after a certain point it will diminish flight time and performance.

If you ESC has logging.Temporarily add weight and see how much more amp draw you get with the added weight.

Drop the voltage, more capacity, run SLIGHTLY less HS with less governor overhead. i.e. 5s 7000 vs. 6s 5000, you will actually get slightly more than 40% more flight time as motor and ESC will be running more efficiently at a higher throttle %.

60% of the time, it works every time!
