Set the rudder sub trim to zero.
Take the gyro out of the picture, plug the servo directly into the receiver. The servo will follow the stick, and will return to neutral when you let go of the stick.
With the rudder at neutral, the servo arm should be perpendicular to the side of the servo. If it's not, pull it off the servo, try it in a different position. If you are using a 4-arm servo wheel, you'll find that of the four possible positions, three won't be close to centered at all, the 4th will be dead on, or very close. Leave the arm in THAT position. If you need to use a little subtrim to get it perpendicular, then do so.
With the servo at neutral, arm setup as above, dig out your heli's assembly manual, and set the tail linkage up as described in the manual. That should be a great mechanical starting point.
Put the GY520 back in the loop. Make sure you have both the transmitter AND gyro rudder directions set properly.
Follow the 520 installation and setup instructions. When you go out to fly, turn things on as described in the 520 manual, let the gyro initialize, then switch to Normal/Rate mode. Lift off, hover the heli.
If the nose turns left or right in hover, land, adjust the linkage until you can lift off and hover in normal/rate mode with no tendency for the nose of the heli to yaw left or right.
Recheck travel settings to make sure you're not binding at the extremes of movement, switch to HH mode, go fly.
And NEVER USE THE RUDDER TRIM tab when the gyro is in heading hold mode, and make sure the rudder trim in ALL flight modes is identical, preferablyat zero.
