There are a lot of opinions on this issue. Some set it for 7-8 degrees to be trimmed properly in Rate mode. Others set it dead center and let the Gyro do the work in Head Holding mode.

I set mine dead center. Wrong or right, I figure everything has equal throw both directions. I ONLY use head holding mode so that 7 degrees or so is not an issue.

A close friend of mine used to set up the gyro by hovering in rate mode and adjusting the rod length. However recently he tried setting them up with 0 pitch and it worked better for him on his birds running the JR 770 3D and the spartan ds760.
Piros were more consistent and there was less twitch(espcially on the JR 770 3D) on the tail.

I set it closer to 0. If it torques out in flight, I give it some degree. But always locks in during a punch out so no need.

with my 401 I would hover in rate mode and get it so it won't drift or really close to it. then I switch into heading hold and fly. Seems to work great

Zero degrees here and then make sure your travel is even on either side. So if your travel is say 90/105, set it to be 90/90

I set all helis so that zero input from the tail servo (neutral or centered) will result in hover with no drift.

This is usually about 2-5deg pitched. If you set the throws the same with zero at neutral, hovering will require 2-3deg of input to hold.

Due to the main rotor torque, same piro rate left and right will require different blade pitch angle. So, if the tail was set at zero pitch and neutral and you have the same servo travel left and right, it will yield different piro rate at maximum. However, due to the gyro controls the piro rate it will be same for both direction in most cases. But at that extreme, the actual servo travel will not be same on both side.
