Voltage cut off isn't much use on a heli, you don't want the ESC to shutdown at 9v, just land when you feel the power dropping off from the cells or buy a low voltage detector. I would set voltage cutoff to the lowest setting (4v?).
Throttle type? Never done for a CP but here's my best guess's.
Try Gov mode LOW RPM for a 2 pole Hacker but I'm not sure for that motor.
Otherwise set to 'auto calibrate', Tx throttle low stick in Norm flight mode will be taken as 0% and reduce ATV so that 100% the red LED comes on. Then use standard throttle and pitch curves.
Or try the fixed range and adjust ATV limits to remove dead zones around 0% and 100% etc.
