The battery goes in through the throttle channel.
For your setup you only need 6 channels.

You will want channel 6, the BEC (Battery Eliminator Circuit) in the Phoenix 10 will supply power to everything. Channel 6 will supply your pitch.

Yup, pitch on ch6. Also, you might look at getting a TX with a 5-point throttle / pitch curve like the Hitec Eclipse 7 or the Futaba 7C. The point here is to manage your head speed so it's constant and high. When you give it positive pitch, you don't want the motor bogging down.

You might be able to achieve this with the phoenix 10's govenor mode, but I didn't have much success with it. I've heard people say that the new firmware fixes the nasty pulsing problems I ran into with it, so it might work great for you.

I just got my Eclipse 7 last week and I'm extremely happy with it

Haha, I mis-read RX as TX in #2 on in your post

No, I can't see why you'd need a 8ch RX unless you're gunna do retracts, adjustable gyro, and then some.

A 6ch RX is fine if all you're doing is adjustable gyro gain.
